I'd actually argue to make the boss fights harder >v>;;;
Make them a more engaging back and forth. Each boss fight also has this weird 3 phase rule with nothing different about them as if each time you're able to attack is limited to a certain amount of damage before you just have to wait again.
Final other, minor things:
-Add voice acting
-Improved upon mini games
-Larger fishing pond or able to fish in any body of water
-Side quest track list
-More side quests?
-Toggle off/on Navi tips

Minor change, but I'd love it if the different colored armors weren't just color changes too. Much like how in Twilight Princess and BotW, give the different armors slightly different designs.
Also, be able to switch boots and arrow types as quickly as going through inventory in BotW (5/6)
Since this personal remake fantasy of mine is built using the BotW engine, you get to have real time dynamic weather for ocarina songs and steps that make sounds so you can have stealth segments improved (4/6)
For combat, the original OoT gave us a move set that allowed for directional sword swings depending on button presses but never really utilized them. I'd love to see the enemies reworked so that fighting also felt directionally puzzle-y, kinda similarly to how they worked in Skyward Sword (3/6)
Personally, I'd love it if the map was expanded and filled in more so it doesn't feel so empty. Make Hyrule Field something Great Plateau sized while still feeling familiar to the original. Also, make the different areas seamlessly traversable without dead end, loading doors. (2/6)
If the rumored Ocarina of Time remake is true, I'd love it if it were more than a graphical improvement, kinda how the 3DS version was. Maybe built using the BotW/TotK engine to fuse the modern and traditional styles. Nintendo probably won't make any of these changes, but here's some thoughts: (1/6)
