From albacore crispy rice and Oregon pink shrimp ceviche to fishermen’s stew, seared black cod with seaweed risotto, and a dulse-infused brownie, each course connects plate to ocean.
Between courses, Winter Waters will guide guests through the seafood they’re enjoying, sharing stories about the fisheries, species, and ecosystems behind each dish.
For this Winter Waters collaboration, the culinary team has created a seven-course dinner highlighting seafood sourced directly from commercial fishermen working out of nearby Winchester Bay, a true taste of the richness and diversity of Oregon’s coastal waters.
