I personally like the idea of the choice of height and shapes/species having a consequence on the world building, even if bearly noticeable or a main motivation for a story. There is also a bit of perception by the public at large that can inform the art direction

It's genuinely a question I've been pondering over everytime I design a new roaster of characters for a project X)
And yeah the answer is: figure it out case by case with your gut basically.
