The only counter point I can think of is Oden. Perhaps he did not wish to risk death because of his family, or maybe he just didn’t know how to do it.

This would explain why characters like Roger, Whitebeard (fists), and Shanks (wifi haki) do not have black blades. They fight with more than just their blades, and want to keep their Conquerers Haki.
Someone who considers themself a true swordsman & ONLY fights with a sword? They would do it.
Risk of death aside, you would be sacrificing all other usage of Conquerers Haki. No more knocking out fodder, no more using ACOC on anything other than your sword.
What’s the benefit of doing it then? A sword that is PERMANENTLY coated with haki. It is the ultimate dedication to swordsmanship.
However, as I pointed out above, this would be an extremely risky gamble that only the most dedicated swordsman would attempt. Failure would mean death.
I propose that, in order to forge a ‘black blade’, one must give ALL of their Conquerers Haki away to their blade.
Haki is directly tied to ambition. We know that swords have their own “personalities”, so using the entirety of your haki (ambition) on a sword would surely bend it to your will.
If short term Haki use has a limit, could we assume that a person has a limited amount of Haki overall?
In Ch. 1033, Zoro says that if he gives too much of his Haki to Enma, it could end up killing him. We later see Zoro come face to face with what looks like the embodiment of ‘Death’.
The first fact I’d like to establish is that, while the strength of a character’s Haki depends on many factors, ALL Haki use has a limit.
It’s been explicitly stated that Armament/Observstion Haki can deplete with overuse, so I’m going to assume the same is true for Conquerers Haki.
