one idea I've been tempted to try is "AppView just for self-hosted PDSs" or even "AppView just for PDSs of folks I follow", which I suspect would be a much smaller amount of network bandwidth

Nah, they're different things.
subscribeRepos is the XRPC websockets endpoint that the PDS sends repo changes out of ("here's my new post"). Relays (and other folks) consume that. Those changes eventually make their way to the AppView(s), which is a "materialized view" of the entire network.
Conceptually, a repo appears fairly "static" (and I've seen folks make attempts at implementing it that way), but I eventually discovered that the PDS participates in a lot of stuff.
For example: many calls from the web app get proxied through the user's PDS. And yeah the subscribeRepos endpoint.
