3 weeks prep work finally pays off ... pastrami is done! Beautiful deep pink color. I started with a full packer brisket, did some burnt ends and sliced brisket, and then corned about 5 pounds of it. That corned beef then got rolled in cracked pepper and coriander and smoked to 205.
