Dreaming of starting a bakery... This morning's batch of bread.
Has anyone set up a Sourdough Bread as a service company yet? BaaS it would be. Hmm.

Ceramic pots work just wonderfully, seems the humidity is just right during baking. I usually just keep the temp 250C the whole bake time and take the lid off just in the end for a tasty caramelised crust

Yeah, could be the combination as my dough has had pretty much same proposition, but I've been using Swedish Manitoba flour instead of breadflour. It comes up really nice with apr 20/80 mix of any other flour. Usually 70% hydration

When doing a 100% dough the technique is totally different from breadflour or wheat. Need to make a predough with part of the rye flour first night, and add the rest the next day. I think there is a recipe in some of my posts...

Been avoiding rye for some time, as my stomach is a bit sensitive with it. This time added 150g and the smell of these loafs is delicious πŸ˜‹

Oh it is so good! Soft inside, sweet and sour.
Mix 200g active levain w/ 5 dl buttermilk, 0,5dl dark syrup, 10dl wheat flour, 1dl baking malt, 1,5dl rye flour, 2 tbsp salt > knead, proof, and bake next day at 200Β°C for ~40 min, add glazing in the end with a syrup water mix for a sweet, dark crust.

Yesterday was a bake day again, this time couple of sesame and bran flake breads. The 2nd hand ceramic pot works really well as a Dutch oven.
By today evening, these have pretty much vanished ✨️πŸ₯–

Keep it simple sourdough.
Method: Mix 70% hydration dough in the afternoon, fold 3-4 times every 30min. Let rise couple of hours, and keep in fridge over night.
Bake the next day.

Crepes recipe for a lazy starter πŸ‘Œ
150 g frozen spinach, 250 g sourdough starter, 500 g oat milk, ΒΎ tsp salt, 150 g wheat flour, 20 g rapeseed oil (+ oil for frying)

Thaw spinach. Blend all ingredients thoroughly. Heat pan with oil and fry thin pancakes.
