The video, “Persephone and Hades” from OSP goes over this well. So, simply, Despoina, who use to be a death deity, had her attributes stripped, she was named Persephone, those attributes became a male death god, and she married him.

I think Demeter and Despoina were once a Life and Death duo. But by Ancient Greece, her death deity attributes were stripped along with Poseidon’s and became Hades. Thus she ended up as Persephone, related to death through Hades but existing as a death deity before him.

In the Mycenaean tradition pre-dating Ancient Greece, there was no Hades. Poseidon seems to have been the underworld god and he had a daughter with Demeter named Despoina or “the Mistress”, a title given because saying her name was likely too scary to invoke.
