People always love to hear about innovative/creative assignments, and will almost certainly ask about how you are dealing with AI. I co-write the course policy with students and faculty always love that when I tell them that, so feel free to use that, if that’s not already what you do.
But yes, sample syllabi and assignments. (Mock up a syllabi or two for courses they will want you to cover but for which you do not currently have a syllabus).
As much as I loathe AI, it is helpful for these situations. ALSO, I would say that there is nothing wrong with reaching out to the hiring ctte and asking what they are most interested in learning about you and what you have to offer.
