Seconding aloes! They can tolerate long periods of neglect lol. My husband and I were gifted a huge potted aloe that's older than we are, and pretty much the only water it needs is any rain it gets when it's outside for the spring and summer

Spider plants and philodendrons are both pretty easy and don't need much light. They do need to be watered regularly though
