I threw some (had cut 5 up in advance) in the salad with the Ceasar dressing and the held up really well to the flavor but didn't compete. Like, you taste something but it doesn't smack you in the face all like YEAH I'M A BEET MOTHER FUCKER.

They're like earthier, slightly less bright-sharp-clear flavor carrots, and easier to chew than raw carrots.

I'm going to try them in a cold salad this week, with shredded carrots, celery, cucumber, kidney beans, and whatever protein needs using.

The whole egg use cuts down on how rich it is, but since duck eggs are mostly yolk anyway, it's not much.
