Round 2 tonight with the second half of the fillet. Higher initial oven temps and a shorter baking time meant the exterior of the fillet didn’t overcook. I preferred this.

Yeah, had to boil strips of pork skin to make the jelly, and also lots of very fine dicing, dough making and resting, wrapping, etc… But better than staring at a screen :-)

First time making xiao long bao by myself. Bit of a marathon effort making everything from scratch, but despite the wonky shapes they turned out well. 5 hours of prep time, and all gone in 10 minutes 😋
