I think I agree on dairy for moist fluffy cakes (like a classic birthday cake or cupcake) - cultured dairy makes it more often into tea / snacking cakes which may be denser and have like chunks of apples or nuts to hold up.

I’d say, it depends on the kind of cake and the type of texture / taste you’re going for. There are many types of cake and some I’d use dairy for and for others I don’t.

I bake a lot (also was a kitchen manager, did food demos at markets, briefly a food writer and a cooking teacher, etc) and have tried many things. It’s just my preference. 🤷🏽‍♀️

Yeah, Mackenzie Scott is a fascinating case. She is literally ignoring the SOPs of philanthropy in order to give away wealth as quickly and efficiently as possible and she’s still getting richer. At her level it is impossible not to make money. Tax billionaires, A LOT.
