Chains like Brioche Dorée or Paul would definitely serve coffee because they’re more commercial ‘sandwich shop/cafe’ oriented rather than an independent family-run old-school boulangerie.

Let’s put it this way, I wouldn’t *expect* coffee when I go to a boulangerie. That said there was one next to my college which did, but only because they had a couple of tables to eat in. And even then it was just a shot of espresso in a tiny paper cup. Re sandwiches, they’re made using baguettes.

It depends! Many of them sell sandwiches but not very many serve coffee unless it’s like a chain. Some of the ones in Paris do, but if you’re somewhere more rural generally only bread, pastries and maybe sandwiches.
