Actually now I think about it I do quite like tlačenka (a kind of head cheese) even if the concept is disgusting - the thing I regret most is utopenci, pickled sausages called "the drowned ones." - they seem to live on in your stomach for days.
Of the places I've spent the most time, for the UK it's almost certainly jellied eels, for China it's century eggs (which I once could handle but a switch went off in my brain and now they make me retch) & my Czech answer is tlačenka, which I once ate soused in vinegar & onions in front of vegan gf.
