Seconding the Quintet games that I love dearly! My suggestions might be a bit of a stretch, but for your consideration:

If you like the parrying part of the later Ys games, Sekiro combat is hard but really satisfying.

Also Kingdom Hearts 2 has some of the sickest ARPG combat? For no reason?

One thing I did miss in Chronicles was how Book 1 and 2 has some monsters just be really huge for no reason like the mouth guys in the mines. Seeing one of those for the first time freaked me out lol

"why are younger gamers disinterested in following premium console game releases like I was at their age" can be partly answered by the fact that if you were a PS2 owner in the 2000s you had 3-6 of the best games ever made come out annually, and since 2020 the PS5 has 3-4 big sequels and little else
