-2/3rds of the avocado need to be mashed with a potato mashed or ricer. Finer the better. Mix all ingredients into the mash and make sure everything is well distributed. Then 1/4" dice the remaining avos and stir in to give some chunkiness to it.

-use more salt than you think. Yes balance based on type of chips but you want a generous amount of salt
-use one more lime than you think

Mine fucks honestly. Here are some of the key points
-use whole cumin and coriander, freshly grind them and use in the guac
-remove the seeds from the tomatoes and 1/8th inch dice them. No one likes big ass chunks of tomatoes in guac
-swap red onions for shallots, they aren't as sharp, fine dice.
