Without going into full detail, I think using real names would be fine, but I also think that might be situational depending on the story being told, and it would be respectful to ask individuals for permission to use their name whenever, and if, you can.

On A Pale Horse is one of my favorite Piers Anthony books. I actually enjoyed most of the books in that series. The cover art is by one of my favorite artists, Michael Whelan.

I absolutely love that pic of her with the top hat, and the one with the skull is just fierce.

So, my favorite author posted a video about her first experience visiting a Buccee's.
