And the thing that sets off alarms for me is, if I don’t sleep enough, several of the concentration states I work with in my daily meditation practice simply aren’t accessible. A part of my brain just very concretely does not work ‘correctly’.
Yeah, I’m an extreme example (my “good days” are most people’s “oh god am I dying” days in terms of fatigue, and I precisely measure just about everything you reasonably can for energy + nervous system tone), and for me even the difference between 7.5 and 8 hours is monumental

Yeah, no specific advice there, although I'd bet money that's at least 99% based on the specific culture/strain.
Also crucially missing "sanitize the jars". My favorite trick is to buy a bottle of Star-San from a homebrewing supply store (no-rinse sanitizer) and put it in a spray bottle.

One thing I notice is missing is that you can freeze the yogurt that serves as your culture. I'd make single-serving ice cubes, and just plop one in still frozen when it's time to add the culture.
I think, far enough into the future, both "ME/CFS" and "fibro" won't be useful clinical labels, since they're ultimately describing downstream bundles of symptoms whose upstream (complex, multisystemic) causes we don't yet understand (with some exception, like when fibro symptoms are hEDS or SFN)
