Splendor is another one I've been wanting to try. Root is one of my all-time favorites, but it is definitely more on the wargame side, and has a few unintuitive rules that invariably trip up every new player I teach it to lol
I have, although only once with four players. My girlfriend and I are looking for more good two-player games that aren't directly competitive. We like Hive, Netrunner, and occasionally something heavier like Twilight Struggle, but those 1v1 style games can be a little draining.
