It's not quite that easy. You also need the minority party to perfectly split its votes between exactly two candidates, there's no way to really coordinate your voters. I'm sure given how many elections there are that some day it will happen, but the odds for any particular race are very long.

It's different when you're suing the government. You won't be able to get your money back so it can be irreparable harm.
It's a relevant consideration. Being forced to spend a bunch of money that you can't get back due to unlawful government order is a harm that courts will often step in to prevent. Which is not to say that the decisionmaking process here was correct - but that aspect of it was not unusual.
