Taverner takes the folk tune The Western Wind and weaves a hauntingly beautiful polyphonic tapestry around it. the tune appears 36 times across all parts, and so the piece is effectively a huge set of variations.

I initially thought it was a general cambridge thing, but when I then did HPS in my third year and found that philosophers don't applaud after their lectures, I realised it was specifically a cambridge medical sciences thing
when I did medical sciences as an undergrad in cambridge in the early 2000s, students used to applaud after every lecture
