Acidity and chemistry in ageing Oloroso Why can old Oloroso have a vibrant acidity, even though the Palomino grape is known for its low acidity? We look at some chemical and anlytical elements.

Where does the freshness and acidity of an old Oloroso sherry come from, if it starts from low-acidity Palomino grapes? #sherry #wine

1. Use bio brown sugar, 2. the type of water matters, 3. adding a 1/2 bio dried fig to your water works wonders to activate the grains!

It looks older than it is. Manuel Fernandez is the original name of Bodegas Bobadilla and the same wine / label was bottled until 1991. The grey colour usually isn't a sign of proper storage, but it may also have been a bottom pour? Is there a year stamped in the base of the bottle?

La Barajuela Cortado 2017 (Luis Pérez) Review of La Barajuela Cortado 2017, an interesting wine from Bodegas Luis Perezin Jerez. An old-style Oloroso made from very ripe grapes.

The historical precursor to a Palo Cortado (late harvest and no fortification): oxidative La Barajuela 2017 from the wonderful Willy Pérez #sherry www.sherrynotes.com/2026/reviews...

Technically it's not a lambiek since there's no spontaneous fermentation and only engineered yeasts. Also this one is so clearly artificially flavoured with cherry syrup. On the other hand, in my opinion it's much harder to find a decent 'naked' beer, say pilsener or IPA, without alcohol.

CASKNOLIA CASKS CASKNOLIA CASKS Toneleria del Sur Coopers has always campaigned for quality to keep ahead of the market. Premium quality in our process and care for details towards the best cask outcomes is the only ...

You're probably right, but Port casks are also tailor-made and seasoned, just like sherry casks these days. You pick a cask size, you pick a wine, you choose the toasting level and the length of seasoning. Much like this menu: casknolia.es/casknolia-ca...

Tasting: demystifying sherry casks in whisky Demystifying sherry casks is one of my favourite subjects for a whisky + sherry tasting

Sherry casks used in the whisky industry usually aren't the same as the ones used to mature sherry wines. The inimitable Ruben (Sherry Notes) demystifies the use of sherry casks in whisky production. #sherry #whisky #drinksky
