I enjoy when my boss says "I'll setup a meeting to discuss" because he'll only set it up if he considered it high priority which means most nitpicks I don't have to deal with

How about chili Mac? Saucy but not necessarily sweet
Station setup for shell filling. Biggest recipe difference was that I added meat to my sauce (red sauce is homemade) Recipe by @SteveatVivaldi: https://youtu.be/TWBQ7yB1wjA
Stuffed shells after stuffing. Had to split it into another smaller container because there was too much
After baking. Pretty much a lasagne with a different vibe
Finished plate, with some simple sauteed green beans and some garlic bread Winco absolutely smothers their garlic bread in salty butter. Have to scrape a bunch off and it's still too much... Great if you like butter!
Stuffed shells for dinner. I've been meaning to make this for a while but it helped that a couple of days ago steveatvivaldi on YouTube released a recipe
It turned out very well, though I added too much nutmeg. Winco garlic bread is extremely salty as always ๐

That's basically what I did. I'm betting either I didn't have it hot enough or I didn't leave the skin down long enough
Prepped potatoes for baking. Seems to come out better in the oven than the microwave (not really surprisingly)
Salmon fillets ready for the pan. I did cut them up a bit more before cooking them
Cooking fish and asparagus. Asparagus turns out way better here than the oven
Some final plating. I also grated some cheese, though I forgot to get any green onion
Salmon, asparagus n potatoes tonight. The salmon wasn't super high quality but it was alright. Need to practice cooking it more because I didn't get the skin very crispy
Eternally greatful for the idea of cooking asparagus in a pan instead of baking it

What?
This is what I say to my wife when we're out and I want to go to bed
Arepas before cooking. Shaped by hand Recipe I used: https://www.seriouseats.com/cheese-stuffed-colombian-style-arepas-recipe
Frying em up. They go into the oven after this
Final output. Grainy, under salted, and under cheesed, but still tasty
Inspired by Encanto, here's my first attempt at making arepas con queso. Couple notes:
* Not enough salt
* Not enough cheese
* Probably not enough water
* Maybe make them thinner?
Still pretty good, kinda like eating a cake of grits. Gonna watch a video before I try again

Also it looks good! I'm super tired and my first instinct was katsu advice but I hope the unsolicited advice is useful ๐
I am exhausted today, but I'm happy I was able to make dinner instead of ordering out at least \o/
Pound that chicken flat first and you'll end up with a nice schnitzel (or katsu if you use panko). Great with rice and cooks quick, though it'll take more room in the pan so you can't cook as many at once
Prepped chicken for the pan and a Napoleon anchovy glamour shot
Homemade dressing and some soaking chopped up romaine
Searing up the chicken
Great bowl of salad. Also added some store bought croutons and coarse grated parmesian
Simple ceaser salad tonight, aside from the fact that I had to take a trip to the store to get anchovies. Luckily I still had a couple of pasteurized eggs for the dressing

Nowadays I only really wear my earbuds around instead of over the ear headphones since they're more convenient. I have two exceptions
1) It is cold outside (the over the ear ones are pretty warm)
2) I am at work (makes people leave me alone)
Veggies for the sauce This is the recipe I use with tweaks. For example, I don't want to have to extract an onion... Https://www.seriouseats.com/the-best-slow-cooked-italian-american-tomato-sauce-red-sauce-recipe
Big-ol cans of tomatoes I get from a nearby US foods store. You can see the tomato paste in the background and I threw in a little harissa paste too)
This is the sauce after about 6 hours of oven time and after adding in the reserved tomatoes
Made about 6 quarts, which is a good 3 big servings of spaghetti for us
Also today I made some red sauce. Goes all day in the oven and turns out delightful

Recipe: https://youtube.com/shorts/A6gXjkbPsjY Most of the mise (forgive the messy table). Turkey fat (from thanksgiving), seasoning (mostly Italian blend), onion+garlic, parmesian, BTBouillon, flour, chicken, and parsnips+carrots Lasagne noodles, water, and cream are all offscreen
Frying up the chicken in some oil and butter
The finished soup. I reduced the roux amount since my wife prefers thinner soups. I should have broken the lasagne noodles more
A scoop of soup in a WinCo bread bowl
I found some bread bowls at WinCo so I decided tonight was soup night. This recipe was advertised as lasagne soup but it strikes me as more of a chicken pot pie flavor. Turned out well with some minor modifications

One last update. Just got back from a late party where I made (too much) of this Mac and cheese and it was a hit! ๐
Really glad I did the tests first. Keeping this recipe in my back pocket for any future parties
I think onions should be in everything because I like onions
Made another batch of mac with 2 different kinds of cheese and less roux. Wildly more successful so I'll probably do one of these when I make it for a party. On the fence about bothering with a panko topping

More garage cleaning. Just setting up some shelves and getting things off the floor (though I'm gonna try to throw a lot off stuff out)
Ever thankful to Costco for the plastic green made 5-tier shelves for like 30 bucks

Small batch of mac and cheese. I used gouda, Velveeta, and Colby jack. Apparently this was a viral recipe for a while. The flavor of the smoked gouda kinda ruined this version, but it might be okay as a chili-mac. I'll try again with different cheeses soon; I'm thinking romano+parmesian https://www.allrecipes.com/tini-viral-macaroni-and-cheese-8409676
Strawberry cake via King Arthur. Accidentally doubled the butter and it still turned out well. I do want to try another version with freeze dried strawberries to make it last longer in the fridge Very interesting technique to beat the butter into the dry ingredients instead of creaming it https://www.kingarthurbaking.com/recipes/strawberry-cake-recipe
Today I tested some recipes. This is a second go at strawberry cake which turned out quite well (though I still want to try and get one that uses freeze dried strawberries). The other is some oven mac and cheese. The texture was excellent, but smoked gouda was a bad flavor choice

My wife showed me a tiktok today and the word "Felicidades" was auto-captioned as "Felicia Dallas" and I think that's a great drag name
A homemade dip of homemade black beans, homemade Mexican rice, corn, and some leftover chicken. The rice and beans were from frozen blocks (very convenient) To the right is an avocado I mashed up with onion and seasonings I also have some coffee and tea and some off-screen tortilla chips
My life changed when I realized I could have chip dip and guacamole for breakfast
One of my faves
Personally, I think this holiday should be retired.
