Dinner tonight, seafood gumbo, rockfish and two types of shrimp, red Argentinian and jumbo white (I didn’t have my usual seafood medley available), andouille sausage, and the trinity….my roux is usually blonde, so the sauce is a lighter color. And I don’t like okra in my gumbo….

Excellent choice. When I make my meat sauce I mix beef and Italian sausage (hot and mild). Of course I spend the longest time skimming the inch of fat from the sauce….😁
