Don’t give in on the things you really want! I had a 5 minute ceremony with only immediate family and our cake was cheesecake. No one else wanted cheesecake but WE wanted cheesecake. It’s your wedding and you should do exactly what makes you (and your future spouse) happy.
My family kept pressuring me about a bridal shower (I didn’t want one) but that’s something other people usually plan. When I brought up how I wouldn’t be planning and hosting my own, all of the pressure died down. Turns out my family wanted the tradition without putting in any effort.
Consider & discuss the things your fiancé wants but if it’s something neither of you cares about & is purely for family then don’t prioritize it. OR if you don’t care either way about something like the lunch but just don’t want to plan it, delegate that to the family member who wants it most.

I realized as I was typing it sounds like I did a mission trip or something and absolutely no. Vacation with the wife and in laws to visit their family.
15 days in the Philippines is over and as much as I want a hot shower and even hotter food, I don’t want to leave. Spent 6 days without electricity or running water and it was just about the happiest I’ve been in a very long time.
