"Second Torah" was also a Jewish name for it before the Greek one, it's from a verse where it says Moses gave a copy of the Torah (משנה התורה)

Leviticus is because the book mostly contains Levite/Priestly laws (although there's a lot of narrative too).

Deuteronomy means "second law" because it contains a lot of the laws said in the middle 3 books again.
