Closely bunched bright pink stems growing out of the soil, the top two thirds of the stems are surrounded by leaves. The stems and veins on the leaves are pink while the leaves themselves are green.
Here’s a pic of the leaves of the beetroot plant, in case anyone is wondering what I’m talking about. I can’t believe how much food we humans just waste when we only use the root..!
White bread sandwich on a white plate covered in a questionable bright pink liquid, which has soaked into the bread. It’s actually the watery mayo liquid from the coleslaw, which has been stained by the beetroot stalks. The ham, cheese and coleslaw sandwich has some pieces of coleslaw spilling out onto the plate.
Not sure who needs to hear this but if you cut out the central maroon stem from beetroot leaves, they are like beetroot flavoured celery, and you can add them to homemade coleslaw and MAKE IT PINK AND IT IS LUSH. The green beetroot leaves can also be added to salads or cooked like spinach.
I have one kink and it’s not a bad idea but it’s also not the best thing for my body and I have a bad feeling that it might not work out well with me because of my skin condition.

Hahaha I had this happen to me! I was helping a patron who was struggling with the computer and got loudly “shushed” by a another patron.. i guess they missed the memo that #libraries aren’t always quiet places..
I do! And I love it! Even the difficult library customers are entertaining, at least.. all part of the rich tapestry of life.. 😀
Working in a public #library has been going really well up until my last two shifts, which have both ended with an obstinate customer arriving within 5 minutes of closing time and expecting a full library service with really random extra requests because they are standing at the service desk.
Mine is 3! I’ve never been to a book club, damaged a library book, or ruined a book in the bath.
Sadly I think there is a lot of truth in that. The system doesn’t want people who think for themselves because they might start questioning the system and be ‘woke’ enough to poke holes in it! The system wants a population that conforms, not questions.
Which is so boring. And it teaches kids that learning is just about memorising stuff, not actually applying anything that they learn or observe. No wonder so many are disenfranchised. By the time they get to the level where they have to actually think about anything they complain it is too hard..
It’s horrifying watching all this unfold in real time and I really want to stop doomscrolling but its a bit like seeing an accident happen in front of you and being unable to look away. I need to step away from the internet but I fee guilty for prioritising my own sanity and mental health.
I honestly think children should be taught critical thinking skills from the start of their education. Leaving it until college is too late for those that lack the skill entirely..
