To clarify the couche is just flour, spray oil is on the bread :p

I think I answered my own question, it sticks. I oiled it well with spray oil and it came out ok but, next time maybe pil plus flour. Mext step home made couche with a teatowel, spray oiled and floured. Hopefully won't stick.

Can I use this as a #ciabatta bulk fermentation container? Lid is loosely on. Or is there a reason the recipe recommends bulk fermentation on the countertop?

My Cibatta tastes amazing, but the crumb is a little sad. Time for another try today! It's cold, going to double the rise times. Wish me luck!

First rise 1 hour, kneed for two min to degas, then second rise for 1 hour. The recipie calls for instant yeast and I used triple the amount of active dry yeast instead because I don't have much luck with instant.
