Place all the ingredients in a saucepan. Cover and cook over medium heat, stirring from time to time, for 15 minutes. Remove the cover, and continue cooking, uncovered, until thickened (about 30 minutes). 2. Puree the sauce through a food mill. Taste for salt. Note: If you prefer to puree the sauce in a blender or food processor, be sure to peel the tomatoes before cooking them and remove the parsley stems. Heat the oil and the butter in a saucepan, and sauté the onion over medium heat until soft and translucent. 2. Add the tomatoes, the basil, the sugar, and 1 tsp. salt. Cook, uncovered, over medium-high heat until thickened, stirring from time to time. This should take about 30 minutes. Taste for salt. Note: If you prefer a smoother sauce, puree it through a food mill or in a food processor or blender.
