The reason becoming atheist is different than becoming Christian is that Judaism cares about actions, not beliefs. Belief in God is a matter of personal opinion. Becoming Christian means affiliating with a group that has persecuted Jews for millennia, and praying to a different God (i.e. Jesus).
To get less metaphorical: A Jew who becomes a Christian is an apostate, which means they're only *technically* still a Jew for certain limited matters under Jewish law, such as marriage eligibility. But they aren't counted as a Jew for pretty much anything else. e.g. they can't join a synagogue.
Being Jewish is essentially a tribal identity. Judaism is the tribe's religion, but ceasing to believe in the tribe's religion doesn't mean you're kicked out of the tribe. But there are certain things that can (for all intents and purposes) get you kicked out, and one is joining a hostile "tribe."
