Rubbed and smoked for four hours on Hickory. Braised in butter, maple syrup, and pork drippings for two hours. Doused in peach rub and tacked up for an hour.

Working on some pork belly burnt ends

Just finished a 35 day dry age on a prime ribeye primal cut.

Butchered it into 1.75” steaks after removing the pellicle.

Tonight we cooked one for three hours in a sous vide at 129.5°F and then seared it over charcoal. The result was phenomenal.

This is my most tasty hobby.

An “am I the only one” question:

Any time a saucy dish is made in a wok, I find it to be a moral and flavor imperative to absolutely stupid it up with sesame seeds. Like, a criminal amount.

So the lair comes with 3 acres of forest. Off on one side are a couple of apple trees we did not know about until recently.

This year we picked them and there were about six grocery bags worth. We are now making apple pies.

They are awesome.
