I LOVED the All-of-A-Kind Family series and later read all of them to my kids. I’ve discovered that many of my fellow Jewish children’s authors were similarly impacted by them. And I was ecstatic when my 1st picture book was recognized by the Sydney Taylor Book Award!

Fry until they’re as dark and crispy as you like! Serve w/applesauce or sour cream. Yum!! Enjoy! Send a pic if you make them! You may not have latkes in Utah but you have stunning nat’l parks!

4 medium potatoes
1 small onion
1 large egg
2 T matza meal or bread crumbs
1 t salt/dash pepper
Oil for frying
Grate potatoes, onion into bowl. Squeeze out liquid.
Add rest of ingredients, mix.
Heat oil in frying pan
Gently put scoop of mixture in hot oil (1 inch) and flip when edges are brown
