What I like about tofu how consistent yet versatile it is texture wise. Try freezing a block of tofu, thaw it to draw out extra moisture, slice it, air fry for ten minutes, then bathe in a mixture of miso, nutritional yeast, and a little water. Put on bread. Replaced ham & cheese sandwiches for me.
