The people in charge at a lot of these companies have very little hands on game dev experience and fail upwards because they're well connected and/or do a lot of sucking-up. I can just imagine the devs lower down the chain clawing at their own faces as management demanded the fourth engine change...

Well I guess you'd have to find one with a water tight contract so that if they tried to do this you could sue them (sounds like a lot of bother though if you're not that interested in porting)
If you can get yourself accepted as a Nintendo developer/publisher you can always find a porting house but publish the final build to Switch yourself

It really is! Minimal fuss and (generally speaking) they hold your hand through the process of setting up the slightly more complex platforms too. Once you have all that done it's so easy to export to EVERYTHING

Sad that some game makers think they have to resort to AI in their process. Have you forgotten how to love yourself? Every great game you played growing up was made without it.
