Your only gating maintenance item is carbon steel or not - do not get carbon steel. The MAC chef knives are sufficiently nice and I don't do anything except take it to the sharpener when I remember. No need for a nice cutting board - plastic works fine and goes in the dishwasher!

yes! I started it tbh because I had various idol stickers etc I had nowhere else to put, but it's useful for notes on my knitting, book or other media reviews that won't fit in the 5 year journal, testing inks or markers, etc

I also have only been able to use a planner at work. For personal stuff, I have accepted I'm not a paper planner and roll w/ gcalendar/tasks. To use up washi tape, I have a 5 year journal which is about all the real journaling I'm up for, and then a craft/hobby one which is used when I feel like it
