Also it may not be the most efficient way to learn but I've learned blender by starting projects and then looking up tutorials on specific things I need to do.
Honestly the donut tutorial isn't even that great. Grant Abbitt has a great beginner series on his channel. Southern Shotty has some very approachable videos on animation if that's what you're looking to do.

I don't think most people would even notice. Half the time I get prints I have to trim them but a few mm to fit frames anyway
Been there. I definitely recommend taking your sticker designs and printing them at home at various sizes (with the border, that's important) so you can better visualize the finished size before you order. Doesn't have to be great quality or anything, just a real life scale reference.
