Refer to themselves as "Iranian" as a base. Usually leading with Kurdish etc. Those from Iran I've worked with have ALL referred to themselves as both and do not take issue with Persian.

Desk. Immigration has always been slow. It wasn't ever a quick process but at least in the case of an adjustment here in the US they get work authorization while they wait, and those do process quickly

Its u-visas that are taking almost a year to issue just the receipt notices, and consular i-130 petitions bc now even a basic marriage based can take 2-3 yrs just for the i-130 and before that step was 9-12 mos. :student visas are taking much longer too bc they added vetting steps.
For greencards it just depends on your preference category. If adjusting here the times are pretty similar to those in the last 5 years. 2-3 yrs isn't that long, and they do give work authorization based on a filed GC that you can keep renewing while you wait. GCs aren't the crappy processes right
