I have made an excellent discovery! I back-engineered my fave sourdough waffle recipe to avoid all animal fats (for husb who has genetic cholesterol issues) by replacing egg & buttermilk with silken tofu, and it’s somehow BETTER than the normal ones? Which were already the best waffles I’ve had!
