This is probably only interesting to a very niche group of people but I JUST FOUND WHERE THEY TELL YOU HOW MANY PEOPLE YOU FOLLOW ON TWITCH.... it's under Settings > Notifications > Scroll down to "Manage Channel Notifications" > Click "See More Channels"
