Whenever I grab a couple of rotisserie chickens, I remove the and discard the skin, then dice the meat and portion it into 150g bags. Some go in the fridge, and the rest in the freezer- perfect for a quick protein for meals. Even the carcasses don’t go to waste, they make the best bone broth.
