The assembled hand pies, with two on a baking sheet in the foreground and two more on another tray behind it. Each of the hand pies are a rectangular shape, coated in egg wash, with the edges crimped.
My hand and forearm muscles are so fatigued from chiseling away at the frozen mess out front of my house that I dropped the fork *three times* while I was crimping these hand pies. 😭
My mis en place for the dish, including soy sauce, curry powder and flour, cornstarch, butter, diced chicken thighs, diced potatoes, diced onions, and chicken broth.
The onions, in a large skillet, sautéed in butter with the curry and flour mixed in.
A thick sauce resulting from the addition of chicken stock, soy sauce, and cornstarch to the aforementioned onions.
The skillet filled to the brim and simmering with the chicken and potatoes added to the pan.
I am making an attempt at chicken curry hand pies today!

It's obviously not as picturesque as the autumn; but I love doing hikes around Great Falls, Prince William Forest Park, etc. Wineries in VA tend to have fun events. If DC is an option, ice skating in the Sculpture Garden is great for the next month or so!
