I am university trained, so I cannot talk about any tutorials I've come across internet, everything I've achieved thus far was me practicing and going from the coursework materials.

if You want to make VRChat models, You will most likely need to know about:
1. Modeling/Sculpting +Topology for Video games
2. Basic Rigging
3. Blender -> Unity transfers
4. UV Unwraping and Texturing.

There are some more stuff after those, and Unity-specific things, but this would be good start.

3D is vast subject, learning Everything at the same time will be overwhelming, I would recommend starting from easiest things. and avoid "Donut tutorial" its not really a tutorial more as it is a showcase of what Blender can do, rather than teaching You about 3D with proper explanations.
