One of my favorite go to examples of that kind of story, including in terms of inspiring others, is My Neighbor Totoro. Some folks say it has no story, no conflict, but it does all the way through. It's about two kids who have to learn to cope with changes of all kinds, (+)

And I love low stakes AND high stakes stories both, and struggle with writing the low stakes so I'm interested to see what you turn out!!
even something as heavy as getting over the loss of a loved one can have an almost comfortable low stakes chill vibe to it when integrated right and can make for a deeply compelling story at the same time!

Minimal conflicts or minor ones I think are most interesting when it's something like heathy competition, like you offered, or an internal struggle of some kind(+)
