I've been working on my "non-fussy" bread, as in it is 11 a.m. and I want some bread. :) This is a yeasted sourdough, 10 percent rye, 40 percent wheat, rest white flour. 1 cup of discard, 2 t of yeast, 2 cups water, 1T salt. 90 minute first rise, 45 minute free form second rise. No stress yums.

Was out on a long-ish for me bike ride in the glorious sun today and started to bonk; stopped for coffee and a pastry at Blue Ridge Coffee House (yum) and got a quick selfie with this bad bunny. Smiled all the way home.
