Turn the processor on and add the hot melted butter + chopped slowly while the processor is running. Once all the butter has been added and the mixture is smooth and thick, pour it into a bowl and stir through the tarragon leaves. Season and serve with steak.

Melt the butter in a pan then add the chopped tarragon stalks and bring it to a simmer – the butter needs to be hot so that it will cook the egg yolks slightly.

step 1
Put 2 egg yolks in a mini food processor and season with salt, pepper and a pinch of cayenne, then add 1 tsp wine vinegar.
Finely chop the tarragon stalks and leaves separately.

The compound responsible for the heat, capsaicin, is produced by glands located in the placenta. The concentration of capsaicin in the placenta is significantly higher than in the outer flesh, and seeds often contain almost no heat-producing compounds at all.

In reality, the hottest part of a chili pepper is the placenta, the white spongy membrane (also called the pith or ribs) that holds the seeds in place.

The claim that the seeds are the hottest part of a chili pepper is a widely repeated culinary myth (and regularly repeated by Rick Stein), used primarily as a shorthand for controlling heat in dishes.

The end of Viktor Orbán’s autocratic regime is a victory not just for Hungary, but for people who value democracy around the world. Congratulations to Tisza, to incoming leader Péter Magyar, and to Hungarians everywhere.

Absolutely disgraceful that the BBC Breakfast programme gave ZERO coverage, in their first 30 minutes this morning, of the outcome of the Hungarian National Election. www.theguardian.com/world/2026/a...

As the world celebrates the successful flight of NASA's Artemis II, and safe return of its four astronauts, spare a thought for the crew of Apollo 13, which was launched for its planned visit to the Moon on this day 56 years ago.
