Experimenting with tofu tonight to make black pepper tofu with brown rice for dinner. I broke the tofu up and boiled it before frying it. I saw the tip on Instagram and had to try it. It turned out so good. Close up shot so you could see the texture 😍🍽️🍜

It’s so good. I used salsa verde, cream cheese, sour cream, broth, cumin, chili powder, fresh corn, jalapeños, zucchini, yellow squash, onions and garlic. 😍🍽️🍜
The rest of the week:
- black pepper tofu w/stir fried veggies and steamed rice
- lemony garlic grilled chicken w/roasted sweet potatoes and an avocado crema
- Italian pasta salad w/chickpeas, cucumber, tomatoes, olives, red onion, banana peppers, and parmesan. 🍜😊🍽️

It was 8 jalapeños, a can of crushed pineapple, a 1/2c of brown sugar and a cup of water. I just cooked it down until it reduced and started to thicken.

Added a little brown sugar which gave it a hint of caramel flavor as it reduced. It’s good! The heat is tingly and warm but not too hot. The sweetness of the pineapple and sugar is lovely. 😊 🍜🍽️

Using my first batch of garden jalapeños to make a jam(?). I’ve had a can of crushed pineapple in the pantry for months. Decided to toss sliced peppers in it with the juice of a whole lime. Gonna cook it down and see what happens! It smells so good. May make a drink with it tonight too. 😊🍽️🍜

Veggies do so well in the air fryer too! I love to cook broccoli, zucchini, carrot fries, sweet potato fries, cauliflower, green beans. They all turn out so well!
Sure! Filling is a 1/2 lb ground turkey, 1 diced potato, 1 chopped onion & 1 jalapeño w/chili powder, cumin, onion, garlic powder, salt & pepper. Cooked & mashed a little bit. Warmed corn tortillas and rolled them w/filling & queso fresco. Air fried at 400 for 12 mins flipping halfway through.

Yep. That’s exactly how I do it too. Take the bits and pieces and then supplement at the store. Just work through my pantry, fridge and garden.

Rainy day tomorrow so I got a few new cookbooks to read 🥰📚
Tomorrow, I think I’m gonna make a dish with creamy polenta topped with fresh ricotta, grilled veggies (zucchini, squash, peppers, onions and tomatoes) and finished with a drizzle of chimichurri. A way to clean out the fridge and use up veggies. And I haven’t made cheese in a while 😊🍽️🍜
