I'd say 30% vegetables at minimum.

If I were making my mum's wonton recipe, I'd go as high as 70% with bok choy. I'd blanch, chop and squeeze out the liquid before mixing in with pork.

Surfacing only to say that in my recipes, the key ingredient is actually the ratio of vegetables (napa cabbage or bok choy) in the filling mix.
