You are right that Buffalo is not eligible for Michelin stars. Michelin inspectors only go to major metropolitan areas, or places that they are paid to cover.
Buffalo has no Michelin stars, but there is Michelin-level talent cooking at DiTondo, where Fabio Consonni and Rita DiTondo have used their Michelin resumes to reinvent the restaurant her great-grandfather Sebasiano founded in 1904.
