Fr it's good 🙏 Let the chicken sit uncovered in the fridge overnight to dry off the right amount and then lift the skin away from the breast before you put it in the oven so the juices can run out and the skin can crisp up. Those with the spatchcocking makes the skin crispy and the meat moist ✨

Decided to use the four day weekend to do some more cooking and this time try some new methods. Spatchcocking the chicken and separating the skin to put the rub under it was definitely the right call. Crispy skin and beautifully moist meat all the way through 🙏
